I recall Robert F. Moss from Southern Living calling the spread of Texas Style barbecue across the south akin to kudzu. It made sense to me. Kudzu spreads rapidly and voraciously. I saw this first hand as a child and can still hear my dad speaking angrily at this invasive vine that was spread across our backyard. Funny thing is, I always thought kudzu was a made-up word.
Well, it's become quite obvious that Texas-Style barbecue has spread across the United States. Nothing is stopping it. I know this because I cannot keep up. Offset smokers, built by almost 100 pit builders (see my growing list HERE), are popping up from the Pacific to the Atlantic and everywhere in between. These pit builders are snatching up propane tanks like easter eggs and restaurateurs and pop-up mavens are setting up platters adorned with butcher paper across the land.
Here is an alphabetical list by states (which will be growing) of all of the Texas-style BBQ spots across the United States along with 3 photos of platters they are putting out. If I could not find platters I did not include them below. My criteria were that they had to deem themselves to be 'Texas-style' AND had to include at least 2 of the 3 Texas Trinity items.
So far there are over 119 BBQ Joints featured in this guide with over 357 platters. That's a lot of barbecue eye candy which I will continue to update. If you see someone I'm missing shoot me a message and I'll get them on as soon as I can.
