12 Days of Smoked Meats - Stiles Switch

I'm a huge fan of the folks at Stiles Switch BBQ and The Switch in Dripping. I visited them in the early days at their initial location on North Lamar and watched from afar as they opened The Switch in Dripping Springs and their newest location in Cedar Park. They are always generous, beyond passionate about bbq and food, and immensely creative.

A fun annual event for them starts today, Tuesday December 8th. It's called the '12 Days of Smoked Meats' and features festive non-regular menu items on each day for 12 days at all 3 of their locations. They also invite some friends in the Austin culinary scene and beyond to come in and cook with them. A lot of these dishes only appear once a year, so you need to get in there to try them before you have to wait ANOTHER YEAR to have a chance.

This is their 8th year doing this and along with this holiday meat extravaganza they are celebrating their 9 year anniversary of the opening the original Stiles Switch BBQ on Thursday, December 17th.

To mix things up, and increase your odds of getting to try out as many days as possible, they will be doing the 12 Days at all 3 restaurants(Stiles Switch BBQ (6610 N. Lamar in Austin) Stiles Switch BBQ (800 W. Whitestone in Cedar Park) and The Switch out in Dripping Springs). Since The Switch is currently closed on Mondays and Tuesday s they will only be doing 10 of the 12 days.

  • Day 1 - Tues, Dec 8th: Brisket King Ranch Casserole with Smokey Arbol Tomatillo Sauce served by the plate with Spanish Rice & Brisket Pinto Beans. Guest Collaboration with Joel Fried of El Dorado Cafe.
  • Day 2 - Wed, Dec 9th: The Waxahachie Hot Chicken Sandwich. Guest Collaboration with Matt Pittman of Meat Church.
  • Day 3 - Thrs, Dec 10th: Smoked Brisket Meatloaf served by the plate with Buttered Mashed Potatoes & Texas Toast.
  • Day 4 - Fri, Dec. 11th: 1lb Chicken Fried Beef Rib with Cream Gravy and Cheesy Tater Tot Casserole.
  • Day 5 - Sat, Dec 12th: Texas Barbecue Taco Day. Guest Collaboration with Chef Philip Speer of Comedor ….bringing the good stuff!
  • Day 6 - Sun, Dec 13th: TAMALES! Fresh Ground Masa, Choice of Smoked Brisket Tamales with Red Roasted Salsa or Pulled Pork Verde Mole Tamales with avocado cream sauce served by the plate with Spanish Rice, Brisket Pintos, Chile Con Queso & Chips
  • MONDAY, DECEMBER 14th - CLOSED
  • Day 7 - Tues, Dec 15th: Ola Mailman Sandwich - Table Chopped Brisket, Switch Spicy Sausage, Cheddar, Yellow Onion, Sorghum/Mustard BBQ Sauce on a Olamaie Biscuit. Served with Buttermilk & Tabasco powdered potato chips with Guest Chef Michael Fojtasek of Olamaie & Lil Ola’s Biscuits.
  • Day 8 - Wed, Dec 16th: Smoked Prime Rib served with House Horseradish Cream Sauce. Paired with Fried Rib Glazed Brussel Sprouts.
  • Day 9 - Thrs, Dec 17th: * STILES SWITCH 9 YEAR ANNIVERSARY* Smoked Tomahawk Ribeye with Loaded Baked Potato …..and some special surprises. THANK YOU FOR 9 GREAT YEARS!
  • Day 10 - Fri, Dec 18th: The Switch Gumbo - Smoked Brisket, Chicken, & Sausage served over potato salad and a side of Dunker’s Crackers.
  • Day 11 - Sat, Dec 19th: Chef Callie Speer’s Famous Migas Kolache with Smoked Pulled Pork. Guest Collaboration with Chef Callie Speer
  • Day 12: Sun, Dec 20th: TAMALE PART DEUX: Fresh Ground Masa, Smoked Brisket Tamales with Red Roasted Salsa or Pulled Pork Verde Mole Tamales with avocado cream sauce served by the plate with Spanish Rice, Brisket Pintos, Chile Con Queso & Chips

I checked in about take out(for these special items) and selling out of these specials. "We will be doing all items in house and most of them will be available for Curbside TO-GO the day of. The links for online ordering are on each of the websites home pages. It's a cannonball run, but we try to gauge the demand every day as best as we can. The best place for everyone to stay up to date for daily updates is on our social media channels like @StilesSwitchBBQ and @TheSwitchDripping on Instagram. We do lots of surprises along the way with special featured beers, cocktails and fun items we sell for the holiday time only like the candied Brisket Brittle I make. I only make it once a year because its super labor intensive (and makes me wanna punch Santa after I'm done doing it), but its delicious and it sells out pretty quickly in store."
