That ‘underground’ pop-up was called Trudy’s Underground Barbecue and it morphed into the brick & mortar SLAB Barbecue. We talk about everything SLAB as well as fermentation, pickling, painting, upcoming Friday night shawarma nights at SLAB, what he listening too and his favorite restaurants that aren’t BBQ.
